Healthy Doggie Gnocchi

Ingredients:

4 x large baking potatoes
1/2 cup tapioca or other grain free flour
Small sprinkle salt
1/4 teaspoon baking powder
1 large beaten egg

Lily loves potatoes and I love to create recipes that incorporate them as they have loads of health benefits and deliciously too! Potatoes are a super source of easily digestible fibre, good source of vitamins C and B6 and naturally low in fat. If you want to add even more nutritional goodness then you can add beetroot, carrot and spinach, flavour your dog will LOVE!

 

Method:

Wash, pat dry and prick potatoes with a fork, then bake in oven at 350 degrees for approximately 45 minutes.
Once potatoes have cooled after cooking remove skin and spoon flesh into large bowl, then mash.
Add beaten egg, salt and baking powder.
Sprinkle 1/4 cup of flour onto clean counter or chopping board and knead the potatoes into it. Add the remaining flour and continue to knead until you have a dough consistency.
Roll a piece of dough into a rope approximately 1/2 inch thick and then cut into pieces 1/2 inch lengths. Score the surface of each piece gently with fork then place gnocchi on baking paper until you are ready to cook
Bring medium pan of water to the boil and let simmer and add gnocchi a few at a time. Once the gnocchi rises to the surface it’s ready!
Remove with slotted spoon and once cooled serve with your dogs favourite meat or fish.

Beetroot Gnocchi
Peel and grate one small beetroot.
Cook in 1 teaspoon olive/coconut/rapeseed oil over medium-low heat until soft.
Transfer to food processor and purée until smooth.
Stir into the mashed potatoes and add extra flour.

 

 

Spinach Gnocchi
Wash and roughly chop a handful of spinach.
Cook in 1/2 teaspoon olive/coconut/rapeseed oil over medium-low heat for 5 minutes.
Squeeze moisture then transfer to food processor and purée until smooth.
Stir into the mashed potatoes and add extra flour.

 

 

 

Carrot Gnocchi
Peel and grate one small carrot.
Cook in 1 teaspoon olive/coconut/rapeseed oil over medium-low heat until soft.
Transfer to food processor and purée until smooth.
Stir into the mashed potatoes and add extra flour.
