Ingredients

  • 4 medium-sized potatoes

  • 2 carrots (peeled and chopped)

  • ¼ butternut squash (peeled and chopped)

  • ⅓ cup red lentils

  • 1½ cups water

  • 1 dessert spoon nutritional yeast

  • 2 dessert spoons coconut oil

  • 1 teaspoon fresh or dried thyme

  • Pinch of salt

Method

  1. Preheat the oven to 180°C (350°F). You’ll need a small casserole dish for this recipe.

  2. Boil the potatoes: Simmer until soft, then drain. Mash with 1 dessert spoon of coconut oil and set aside.

  3. Cook the veggies: Melt 1 dessert spoon of coconut oil in a saucepan. Add the carrots and butternut squash. Cook for about 5 minutes, stirring occasionally.

  4. Add the lentils: Pour in the red lentils, water, and a pinch of salt. Bring to the boil.

  5. Bake: Transfer everything to a casserole dish and bake for 30 minutes, stirring halfway through.

  6. Add flavour: Once cooked, stir in the thyme and nutritional yeast, then let cool slightly.

  7. Top & serve: Pipe or smooth the mashed potato on top of the lentil and veggie mix, then serve warm or chilled.
